Combine the marinade ingredients and marinate meat. Let sit at room temperature for 30 minutes or refrigerate for at least 2 hours.
Fire up your Cru oven.
Once your Cru reaches 450-500°F, preheat a cast-iron skillet or any wood-fire oven safe cooking vessel.
To cook the meat, lay each piece, without crowding too much, onto the hot pan, cooking at 1-2 minutes a side (depending on the thickness of the meat). Pull meat, set aside and repeat until all of the meat has been cooked.
Once cooked, chop meat into small pieces and put back into the pan for a final time.
Put on tortillas and top with your toppings of choice.
