Wood Fire Roasted Sablefish (Black Cod)

1 lb Sablefish (Black cod) fillets, skin on Marinade: 60g (1/4 cup) sake or shoaxing rice wine
60g (1/4 cup) mirin
72g (4 TB) shiro miso
36g (3TB) granulated sugar


Mix marinade ingredients together. Pour into a container and place sablefish fillets into the marinade. Cover and marinate, refrigerated, for at least 2 hours, if not overnight.

When the fish is marinated light a fire in your Cru oven. Build a robust fire and let it burn. You need to generate enough coals to cover the entire baking stone so use enough wood.

Once wood has burned down to coals scrape the coals forward to evenly cover the stone. Place the grilling basket directly onto the coals. Cook for about 6 to 8 minutes per side (just flip the grilling basket over) or until fish is cooked through and firm to the touch.
