Wood Fire Roasted Lobster Tails

Serves 2-4

OVEN TEMPERATURE

400°F - 450°F

ingredients

2 lobster tails, cut in half vertically

Marinade:
60g (4 TB) extra virgin olive oil
1 clove garlic, minced
1 tsp dried oregano
2 TB minced fresh parsley
Salt and pepper to taste

Garnish:
Lemon wedges

Light a fire in your Cru oven and build a robust fire and let it burn down to mostly coals.

Mix marinade ingredients together. Brush marinade onto the cut sides of the tails and place in the grilling basket.

For Grilling Basket

Once wood has burned down to coals scrape the coals forward to evenly cover the entire stone. Place the grilling basket directly onto the coals. Cook for about 6 to 8 minutes or until lobster is cooked through and firm to the touch.

Without Grilling Basket

If you do not have a grilling basket do not worry. Once you scrape the coals forward to cover the entire stone, simply place lobster tails shell side down directly on to the coals. Cook for 6 to 8 minutes or until lobster is cooked through and firm to the touch.
