Season bone-in ribeye with salt and pepper. Let stand for 30 minutes before cooking in the Cru oven.
There are several ways to cook steak using your Cru oven and all start with lighting your oven and building a robust fire. Let fire burn down to coals.
Once fire is ready push coals to the back of the oven. Unlike chicken you can have the coals right up on the pan and even scrape coals around the sides of the pan. Attach the half oven door. Place pan on the stone to preheat pan (note if using a ceramic pan be sure to add some oil to the pan to prevent cracking the ceramic) for about 5 to 10 minutes. Once preheated place steak in the pan and set directly on the stone. Monitor steak and rotate as needed to prevent over browning. Flip steak after approximately 5 minutes and cook another 5 minutes or longer to desired temperature.
Allow fire to burn down to mostly coals, some flame is great and you will find your personal preference for a coal to flame ratio as your experience with this technique increases. Evenly spread the coals over the entire baking stone and carefully place the Cru grilling grid directly over the coals. Place steak directly on the Cru grilling grid and grill (you do not need an oven door for this technique). Flip steak after about 5 minutes and cook another 5 minutes or longer to desired temperature.
Allow fire to burn down to coals, some flame is great and like the grilling grid you will find you personal preference for the coal to flame ratio. Evenly spread the coals over the entire baking stone and place the steak directly onto the coals. Monitor steak closely. Flip after 5 minutes and cook for another 5 minutes or until desired temperature.
