Wood Fire Cast Iron Steak

Makes 1 Large Steak

1 1/2” thick bone-in ribeye
Salt and pepper

Butter and fresh herbs to finish (optional)

12” cast iron skillet


Prepare the steak by seasoning generously with salt and pepper. Let come to room temperature.

Light your Cru oven. Heat to 900°F. Scrape the coals to the back of the oven. Place a 12” cast iron skillet directly onto the stone. If using the Cru 30, close the oven door. If using the Cru 32, use the half door. Ensure that the skillet is pushed far back into the oven. Preheat skillet for 10 minutes.

When ready, if using the Cru 30, take the oven door off and gently put steak into the skillet. If using the Cru 32, simply slide the skillet out from under the bottom of the half door and put steak into the skillet.

For medium rare steak, cook 2 to 2 1/2 minutes per side.

Once done, take steak out of skillet and place onto a plate. Put pat of butter and sprinkle fresh herbs onto steak, if you’d like. Tent with foil and let steak rest for about 5 minutes before enjoying.
