Makes 4-6 Servings

1 c passata or tomato purée
2 TBSPs lemon juice
1 TBSP olive oil
1 tsp sweet paprika
2 cloves garlic, grated
1” segment ginger, grated
1 tsp dried oregano
1/2 tsp ground allspice
1/4 tsp ground cinnamon
Salt and pepper to taste

2 lbs boneless skinless chicken breast, cut into 2” cubes


Mix marinade ingredients together. Pour into a container and place chicken into the marinade. Cover and marinate, refrigerated, for at least 2 hours, if not overnight.

When the chicken is marinated light a fire in your Cru oven. Build a robust fire and let it burn. You need to generate enough coals to cover the entire baking stone so use enough wood.

Once wood has burned down to coals scrape the coals forward to evenly cover the stone. Place the grilling basket directly onto the coals. Cook for about 6 to 8 minutes per side (just flip the grilling basket over) or until the chickenn registers 160°F and is cooked through.
