Pide Meat Filling

Makes 3-5 Pides

Pide Dough

2 TBSPs olive oil
1 lb ground beef
1 small onion (80g), minced
1/2 green bell pepper (80g), diced small
2 cloves garlic, minced
56g (2oz) jarred roasted red bell peppers, diced
3 TBSP tomato paste
2 tsps ground cumin
2 TBSPs smoked hot Spanish paprika
2 TBSP parsley, minced
Salt and pepper to taste


In a large pan, heat olive oil over medium heat. Add onions and green bell pepper. Sauté until onion is translucent, about 5 minutes. Add garlic and roasted red bell pepper and sauté for about 2 minutes. Add ground beef and raise heat to medium high. Brown beef while constantly sautéing.

Once the beef has browned, add tomato paste and let caramelize. Mix well into the beef. Add the cumin, paprika, and parsley. Season with salt and pepper.

Take pot off heat and set aside to cool before filling pide dough.
