Flour Tortillas

Makes 16 small tortillas


500°F - 550°F

500g (a generous 4 cups) all-purpose flour
6g (1 1/2 tsps) salt
7g (1 1/2 tsps) baking powder
100g (8 TBSP) vegetable shortening
300g (1 1/4 cups) just boiled water


Fire up your Cru oven.

In the bowl of a stand mixer with a dough hook, or a medium mixing bowl, add the flour, salt, and baking powder. Mix well. 

Add the shortening and incorporate into the flour, until you have breadcrumb-sized pieces.

Slowly add the hot water into the flour mixture and knead until you have a smooth dough mass.

Let the dough rest in the bowl for 10 minutes.

Turn the dough out onto your work surface and divide into 16 balls. Let the balls rest for 5 minutes before rolling out.

Roll balls out to 1/4” thick.

Cook in your Cru oven for about 2 minutes a side, or until cooked. Don’t overcook as the tortillas will be crisp.
